WINEMAKING
Fruit destemmed with a small addition of whole bunches. 10-14 days of maceration and fermentation at warm temperatures. Pressed, settled overnight and filled to small and larger casks for about 6 months. 2020 was a cool season with timely rainfall. Lovely ripening conditions during Autumn.
CELLARING
The wine will continue to develop complexity and interest with good cellaring for 3-5 years.
